Roasted lamb shoulder

I splurge on a lamb shoulder last weekend. Cost me roughly RM69 for 2.4kg it wassss hugggeeeeeeee. It was a lot for me and hubs but since we saw jamie oliver cooked it last month hubs has not stop pestering me to make it.

So, off we go to sri ternak to buy the lamb shoulder. I dont know if other places has cheaper one but i think RM69 is quite reasonable lah kot.

Mind you, this dish takes a lot of patience. It took me around 4 hours to make it. And the smell!! Satu rumah bau ok. Hubs was like "dah masak ke?" Every 10 mins. *annoying*

What you need.

Lamb shoulder. Large. 
Rosemary
Garlic satu biji. Dalam 6-7 ulas
Olive oil
5 Large yellow Onion

Easy kan?

How to :

Because the lamb was huge. I cook my lamb dalam periuk yg masak gulai tu. Couldnt be bother to buy a deep baking tray. Pakai je lah apa yg ada.

Chop your onion mcm wedges size. And scattered it at the bottom of your pan ( in my case periuk). 

Rosemary+garlic+ garlic tumbuk. Put some salt. After a bit lumat pour in generous heaping of olive oil and mixed it all. Take your lamb and stabbed it about ten times at various places. Pastu make a hole and pour all the rosemary concoction. Rub it on the lamb. Make sure it get into the hole that you just make. Dont for get to seasoned it with pepper

Put the lamb on top of the onion and pour in dalam 3 cups of water. Jgn sampai tengelam kan lamb. Just about sama paras dengan onion tu. Cover the whole tray with aluminium foil and put in oven for 3 hours 180c.

And then continue to cook another 1 hour not covered. Do jenguk2 and kalau air dalam pan tu dah kering. Tambah. 

Done. 





Oh and the sauce? Just use the lamb dripping inside the pan with the onion. Just reheat on stove and stir on some fresh cream or butter and floor if you dont have cream. 

We have a lootttt of leftover. Itu pun lepas 2-3 kali makan. Lunch+tea+dinner.
Besoknye buatkan hubs grilled cheese sandwich with lamb dipped in the gravy. And the rest of it turn into lamb stew. Recipe later eh?

Chicken stew that my kids sukaaa

I have some leftover of roasted chicken fromlast night dinner. Mmg kalau isi ayam/chicken breast kat rumah ni no one gonna eat. So i have to be little bit more creative sebab tak nak membazir, you know. 

Usually i would make a begedil. Or masuk dalam nasi goreng or make a sandwich. 

But since im still having flu, chicken stew is just something that i need. 

I also had gizzard inside the fridge. Kumpul2 dah cukup kot 10. I always made sambal with it. But im using it as a based for the stew too.

What you need :

Large flat plan
Shredded chicken meat Just the meat. (Put aside the chicken skin)
Chicken juice from the roasted chicken of any. 
Chicken stock
Gizzard(optional)
One large onion(dice)
Carrot
Potatoes
Salt and pepper
Flour

Not so many ingredients ey?

How to : 

First thing first. We need to make a stock. Put the leftover chicken bones in a pan with water and let it boil away. Put in basil leave and rosemary if you have any. 

Hot pan, olive oil + a spoon of butter if you want. Cut your gizzard into small pieces and sautee it away. If you have any left over chicken skins do chopped into small pieces and sautee it too. Crispy skin is alwaaaaayyyssss works wonders and bring more flavour.

Put in your finely dices onion. Tossed it around. Once your onion has turn slight brown ish. Put your diced carrots and potatoes. Tossed it around again. 

Put in a spoon or two of flour. Stir it. By this time your chicken stock is ready. Pour the broth into the pan. Use a sieve. Stir it. Your soup will be silky and thicken. Put in your shredded chicken. Let it simmer for good 10 mins. Add water if it dry out. Seasoned with salt and pepper. Put in some chopped parsley in the end.

Easy peasy no?

Ok. This stew is great to eat on a cold day. Nak makan with garlic bread or dumplings or even like my kids- with nasi impit or mash potatoes. 

If you have leftover of the chicken stew plak, you can make yourself a chicken pot pie. Just put your stew in a ramekin. Stir in bechamel sauce if the stew a bit cair and slap over a puff pastry on top. Put in oven 175c for 20-30 mins. Taadaaaa. Instant pie.

Yellow yellow mashed pumpkin

Im always trying to get the cheapest way to cook. Cheapskate lols. BUT why spend more when you can get the same result half of a price. 

I saw this half a pumpkin at pasar borong for merely RM1 and i cant resist not to grab it. 

Thinking of making a pumpkin pie. I need to find time to make the pastry. Kidding not, im very lousy in baking. Tak tau kenapa. Nak measure2 alahaiiiiiii lembab sgt. I only make chocolate cake and choc chip itupun sebab mmg measure using cups. Pathetic, i know. Haha

Ok back to this dish. I wanted a smokey flavour for the pumpkin so i roasted it in the oven for 30 mins 175c. Mind you, i always has excuse to use the oven sebab owh my senannggg. Masuk, turn on the knob and timer and you can mandi, mop lantai etc etc. seriously if you dont have one. Go get it. Buy toaster oven pun ok. You can get it for less than 100. Worth it!

Ok, im melencong. 

Make sure to scoop out all the mid section of the pumpkin (biji + residue) before you roasted it. No need to peel the kulit. 

After 30 mins. Take out and let it cool and scrape the isi out from the kulit. And mash it. On a hot pot. Put in cream and a very small amount of butter and let it simmer. Pour the cream onto the mashed pumpkin. No need to put salt. It tastes good just like that. 

Serve it with meat or chicken.

BTW This is cheap a very2 cheap diah. About RM1 for half for a pumpkin and i only used quarter for this. Kacang buncis is a great alternative for asparagus and it only cost rm3 for one bundle. The only splurge will the beef. Rib eye may cost the cheapest at jaya groccer about RM28 per cut But if you know your frozen store at your place this baby can only cost you RM15 for 3 cuts. 

My cost today for this is only a little bit under RM7. Who said you have to have a deep pocket to eat steak on daily?

Black pepper chicken paling simple dalam dooonniiaaaa

I had a large batch of order for sherperd pie and macaroni and cheese yesterday.

It was 2am mcm tu. Lapar. Ikutkan boleh ja makan the sherperd pie mmg buat cukup2 for customer. Plus i was craving something spicy.

Hence, jadilah resipi black pepper chicken paling mudah sesuai if you sgt2 malas. I always has this masa bujang2 dulu. Reminiscing the old times

How to? 

Chicken cut to small pieces, marinate with kicap manis+oyster sauce+cili padi( potong halus)+black pepper and satu sudu tepung jagung. Mixed it all. 

Pan with a spoon of butter. Put everythibg in and cover up your pan. Tak payah nak tunggu panas pun takpe. Remember, this is a very lazy cooking. Dont judge me please. Lols. 

If you dont have a cover for your pan, buat lah makeshift cover pakai aluminium foil. Let it be on the pan for 5-6 mins. Dah masak, angkat. Eat with cold rice. 

Sedap. It taste a little teriyaki like but with the cili padi it will definitely has a lil kick in to it. Great makan ngn nasi sejuk, Esp makan at 2am. Fatty fatty bam bam. Hoh.

Tilapia again...

I am still in phase where im currently obsessed nak masak talapia fillet ni. Lols

Bear with me.

Talapia was pan fry with butter with rosemary and lemon slice. Seasoned with salt and pepper. Used the brown butter for the sauce later

About 3-4 mins each side sebab this fillet is huggeeee. 

Bak choy was sautee with garlic and cili padi. Yes, you read this right. CILI PADI. I even throw in leftover beef bacon from breakfast. I used oregano, salt and pepper for seasoning. 

Super spicy. But sedappp. Walloping this while the kids was watching despicable me 2 for the 100th times. -.-
