To wake up at 3am and get my a** to the market. Everything is sooo fresh and cheap! Got hold of one week vege stock for only RM11 je. Boleh??

Crispy chicken with potatoes and beans

Im having a very lazy day. The kids are unwell last week so ive been sleeping with one eye open monitoring their temp.

They are well now. But still i am sleep deprived. Many people thinks that kalau duduk rumah ni ada masa nak tido senantiasa. Ooohhh tidak. Sometimes i dont feel cukup masa nak buat housechores dengan menjaga my two rascals.

Enough im-not-complaining. Im grateful. 

Ive been craving for crunchy fried chicken. But unfortunately masa nak masak ni, minyak kat rumah limited sgt. Cant deep fried my chicken so i opted for this. 

Oven roasted crispy chicken with potatoes and beans

Easy peasy.

What u need :

Potatoes
Beans
Garlic
Chicken
Salt and pepper
Flour
Butter


Potaoes. Boil until tender. Drain it and whilst its hot put in a table spoon of butter. 

Butter makes things better like rachel khoo kata. Lols

Chicken. Salt and pepper. Dust it with flour. Hot pan. Splash of oil. Really. One table spoon is enough. Just make sure every surface of the pan is glazed with oil. And sizzle the chicken. Skin side on until it brown. About 2 mins each side. Put aside. 

Beans. If you have french beans. Grreeaattt. But if u think french beans are expensive go for kacang buncit or kacang panjang. Saute finely chopped garlic with the same oil that u used to brown ure chicken. Let it brown and then Put the beans and tossed your pans around for 2 mins. Put it aside

Put all your potatoes and beans on a baking dish. And put the chicken on top of them. Pour the leftover oil from cooking chicken + beans on top of them. 

Put it in oven for 30 mins 175c

Done.

Im serving this with honey mustard sauce

After your chicken is cook. Take all the potatoes+beans+chicken from the baking dish. And you will see on there is a lot of residue on it. That chicken residue with all the lemak2 and minyak ayam. That is golden. Normally, mak2 kita ajar- rendam bekas tu dengan air sabun. Sebab nanti senang nak sental. 

I have the alternative way rather than rendam-to-make-it-easier-to-wash. 

Put the baking dish on the stove. If you are using pyrex like me, api sila kasi kecik. And put in a cup of water. And while the water is getting hot, take a wooden spoon and start hakis all the residue. Put in a table spoon of honey and half table spoon of mustard. Wisk it around. 

Done. 

Serve and eat


Ok. Ayam is separa togel because gib already tore off the skin and ate it whilst i was making the sauce. Believe me, he was trying to push me aside to grab the chicken when i took this picture. 

Bertuah. Akhirnya ayam ni dia punyer.

Potatoes cream soup with pan fry tilapia

Was at out for grocerries shopping last weekend and saw this. Cannot help it. Grab two and chucked into my trolley. I dont have freaking idea what to cook with the fish but, like i mention before my debone skill is non existence, same goes filleting a fish. So seeing this, makes my day. 



Balik baru pikir nak masak apa. 

This recipe was loosely based on masterchef australia 6 where i saw tracy was making a summer vege soup with lobster medalion. It looks goooooddddd. 

Potatoes creamy soup.

How to ?

Russet potatoes
Carrots
Large onion
Flour
Chicken stock
Milk
Cream

Diced your potatoes, carrots and onion finely. If you have celery do put in. I have to forgo it sebab lupa nak stock up. 

Hot pot. A splash of oil. Sautee your onion. And the put in your potatoes and carrots. Agak2 dah brown sikit put in a cup of chicken stock. If you dont have it. Pakai je the chicken concentrated tu. Mix it with water.

Simmer it away. On a bowl mix two spoon of flour with milk. Make sure there is no clumps and pour it into the vegetables. After the vege is well cook, tutup api. Let it cool. Sebab kalau u blend panas2 rosak blender plak no?

After u blend it, reheat it back. And stir in half cup of of cream. Salt and pepper to taste. 

Done.

The fish. 

Ing :

Butter
Salt and pepper
Flour


Hot pan, 1 spoon of butter and a spalsh of oil. Seasoned the fish with salt and pepper. And dust the fish with flour. 

Sizzled it in the pan. Skin side on. Fish cook quite easily.. Soo about 2 mins each side? Just make sure the skin is crispy. Oh sedappp yeee

Serve and eat. I eat it with spoon sebab sekali suap dpt sekali soup. I loooovvvveeee this dish. Something different kan? And talapia plak tu. Selalu buat sambal ikan goreng talapia  garing or better yet my father in law awesome ikan talapia pekasan. Oh, Definitely Need to blog about that too





I do apologise of the lack of garnish. And how simple it look. But believe me what lack in presentation is not lacking in taste. I was licking the plate when im done with it. Its amazing how carrots and potatoes ( a few humble ingredient tbat we have at home and resulted to one awesome delicious filling dish.

School holiday = more food

Its school's holiday. My kids eats a lot during this time. Must be sebab main satu hari panjat sana sini. Aaannnddd dont mention about the mess. Kemas bila diorang tido je lahh. 

Its funny when school holiday means that i have to work more. Hohoho. Ironic sgt.

Maryam esp lovveeeeeeeee pancake. Kalau boleh pukul 12 tgh malam pun nak makan. Usually i reserve pancake on weekends sebab maryam tends to take her own sweet time kalau makan pancake. So during school's morning it will be toast and cereal only.

How to?

Always watching cooking show in afc, using buttermilk can resulted your pancake to be fluffy and bouncy. But lets face the facts that in here 1) buttermilk is demn expensive 2) it is hard to find. Kat malaysia ni tak ramai yg pakai buttermilk pun

So the next best alternative is to use plain yogurt with milk. Its cheap. Rm1.18 satu bekas whilst buttermilk can easily cost you rm12 for 250ml

Plain floor
Baking powder
1 spoon sugar
Milk
Yogurt
Egg
Vege oil

Mix you dry ingredient first. On a seperate bowl wisk your egg with sugar. And add 2 spoon of yogurt and half cup milk. 
Pour into you dry ingredient bowl. Mix it around. Make sure takde clump.  And dont forget to add the oil at thelast bit. Make sure it is not too runny or it stick at the back of your spoon. Jgn pekat 
mcm cekodok plak. 

Flat pan. Hot. Put in a laddle of the batter. Try to make it as round as you can. I dont bother dah. Hahahaha. Its sometimes came out round but sometimes its look like a map. Lols

Flip it when you see the batter start to have tiny bubble all over.

Serve it with butter and maple syrup. Or even ice cream and choclate chip. 



Facts : sometimes i made 15 pieces of pancake for my two kids and still they ask for a bowl of cereal afterwards. How mummy wish she has your metabolism kids. Sobs

Do not throw your kulit udang

Im a hoarders. I rarely throw away food. I usualy end up freezing everything that i think can be use later. 

For example, kalau buat cheese cake u only egg yolk je kan. I will freeze the remaining white egg. Just in case kalau nak buat meringue or pavlova. 

Paling2 selalu that i freeze is. Kulit udang and chicken bones. 

This is of course to make stocks.

Prawn stocks are awesome for tom yam, mee kari or even kari kepala ikan. So i always keep them in hand just in case.

How to ? Sgt simple. just chuck your prawn shell into a pot. Put in cold water. I usualy masukkan a bunch of thyme and basil leaves.

Boil it for an hour. And strain it. Cool and store in your freezer

For chicken stock i usually rebus together with carrots, onion and celery. Thyme and basil. Again, strained, cool and freeze. 

This stocks can be made while you are mandi, or bathing ure kids or while watching tv.  Super easy super simple but generous in flavour. Believe me, that prawn stock will make your tom yam taste like no other tom yam before. It is full with flavour. And it cost next to none. Kulit and kepala udang yg u normally cmpak masuk tong sampah. 

Now, next time. Think twice before you throw it away. Hehehe

Kailan.....

This is a kesinambungan of the post where im using kailan with stirloin steak.

Kailan was dry pan fry until it caramelised at the tips of the leaves. 

Hot pan, splash of olive oil. Fine diced garlic, put the kailan on. Susun the kailan on the pan. I tak kerat the kailan. Just ambik selai2 with the tangkai
Season it with oregano, salt and pepper. I did put a suku sudu of sos tiram on the kailan to get it caramelised faster. 

And cayyene pepper for extra heat. Chili flakes pun ok. 

Sauce was meat juice and a dollop of mint sauce. 


Makanan org bujang

Yesterday was hectic. 

Maryam's ada year end school trip at ostrich farm. So pepagi lagi dah kene handle her. And not to mention that i had an appoinment at KL at 10pm kene keluar rumah at 8.30 with gib. Mandikan gib lagi. Feed him.. Kejar satu rumah nak kasi pakai baju lagi -.-

Reach back at semenyih at 2pm. By that time was mengigil lapar. Gib was fine sebab id already packed him sandwich yg he walloping all alone in the car. I just has banana smoothie at 8am morning for breakkie.

This is a quickie dish. Masuk rumah masak nasi. Fried the chicken. Ikan bilis and potatoes and tumbuk cili padi. By the time nasi masak lauk pun settle. 

Fuuhhhh. My favs org bujang food. Simple, delicious and super easy.
Nasi putih panas kicap with ayam goreng kunyit with cili padi.

End up makan 2 pinggan of nasi and for go my diet of the day.
